I like celery.  With peanut butter on it.  When the kids were little, I'd stick a couple raisins on the peanut butter and cal it "ant on a log" - it never convinced them to eat the raisins, though.  I I grew some Red Chinese celery last year.  It was supposed to be pink, but it just had red streaks, and it was skinnier - too skinny for peanut butter, so it's not my fave.

It's best with jalapeno cheese dip or salmon dip.

I've never tried it with salmon dip but that sounds fabulous!

I won't buy celery but if someone offers me some I will eat it with ranch dressing

Celery is one of those things I buy thinking that would be a really refreshing and healthy snack.

2 month later I think it's a shame throwing out the celery, it seems like a really refreshing and healthy snack.

I juice tons of it. Apple, cucumber, celery with a little ginger is the base for a lot of my juice mixes. I cook with a lot of it in soups and stir fry. But just eating it? Not so much.
