I have had groundhog and raccoon.

The groundhog was a little greasy.

The raccoon got the crap cooked out of it until it was like pulled pork and the stewed a bit more in spicy BBQ sauce. I guess what I am saying is that I really don't know what Raccoon really taste like.

I buy these,  three or four at a time, at the dollar store.

(whoa. that's a big pic)  I use them at work.  They come dull as a butter knife,  but the back is flat (not beveled) and a lot of mindless scrubbing on a stone gets them ouchy-sharp.  Great for cutting rope, which I do a lot of.  I take the plastic thumb-stud out and put in a nut/bolt.  Carry them clipped in my back pocket; the clips eventually break off.  But for $1 (where i work,  if you drop something, it's gone forever) they are dispensabley priceless.
