Pozzole from a friend will be here for the new year. I want you and yours to enjoy! Forget about the gifts and wrapping for adults. Kids sure! Out....dropping microphone

Rum cake, yum!

1 package yellow cake mix
4 eggs
1 cup chopped nuts (pecans or walnuts)
1/2 cup canola oil
1/2 cup rum
1/2 cup water

Grease a bundt cake pan with crisco.
Spread the chopped nuts evenly in the bottom.
Combine the remaining ingredients in an electric mixer bowl and beat until smooth.
Preheat oven to 325°.
Pour batter into pan. Smooth top with spoon.
Bake for 1 hour or until a toothpick comes out clean.
Remove pan from oven and let cool for 15 minutes.
Remove cake from pan and let finish cooling.

For the icing:
1/2 cup butter
1 cup sugar
1/4 cup water
1/2 cup rum

Melt the butter in a small sauce pan.
Add water and sugar and boil for 5 minutes while stirring.
Remove pan from heat and stir in rum.
Spoon the warm icing over the cake until it is all absorbed.
