Costco offers good, prime grade short ribs, let dry on paper towels and get to room temp, season with salt, granulated garlic and pepper, sear on both sides in a very hot pan with high temp oil like canola, put aside, sauté 1 big yellow diced onion and a large tray of sliced mushrooms, season with more salt / pepper / paprika / granulated garlic / thyme. Once onion and mushrooms are caramelized, add half a small can of tomato paste. Let simmer for a minute on low, and add a cup of red wine. Reduce by half. Drain liquid, remove bay leaves and reduce liquid in pan until it thickens. Add some good, aged, Italian red wine balsamico. Taste for salt.
